Project Description

Food tourism has been identified as an increasingly important element of many tourism destinations internationally. Yet ‘research output related to food and gastronomy in the H & T [Hospitality and Tourism) field is still limited’ (Okumu, Koseoglu and Ma, 2018, p.72). While the focus in tourism is often on growth, tourist spend and numbers, equally as important is the drive for sustainability and local led development. In keeping with the UN Sustainable Development Goals food tourism plays an important role in reconnecting people with food sources and sustaining regional identity (Everett and Atchison, 2010), and also provides opportunities for local communities to come together to offer food tourism experiences.

In Ireland there has been significant interest in food tourism and a number of food tourism strategies have been developed. Food tourism destinations have emerged and some have achieved national and international accolades, while others are still at early stages of development. As there is evident activity at local and policy level, this is an opportune time to deeply explore the development path of food tourism in destinations and map their progress.

To do this, an extensive review of the literature on tourism destination development in general, as well as the food tourism destinations literature will be required. This combined with primary research in the field will provide a deep insight into the complexity of the development of food tourism and facilitate the emergence of a model of food tourism development in destinations. As part of this process stages of development will be identified, the roles of stakeholders will be explored and drivers and indicators of movement between stages will be identified.

Student Requirements

Applicants should have a minimum of a 2.1 Honours degree in a relevant discipline e.g. tourism, geography, social sciences, regional development, business or sociology. The student should have excellent research and writing ability, and a proven ability to engage in self-directed learning.
