Milk and dairy products are traditionally important in European diets, yet consumption in UK is declining in population subgroups.

This project will explore the links between animal nutrition, nutritional value of dairy products, sustainability and consumer perception.

The project will focus on opportunities to optimise the nutritional value of milk (in particular omega-3 fatty acids and iodine content), and strategies for production that optimise both metabolic health and environmental outcomes (lowered methane emission).

The project has three specific objectives:

1) To determine how specific animal feeding strategies will impact on the nutrient composition of milk and derived products destined for human consumption, as well as selected environmental / animal health factors.

2) To explore consumer drivers and barriers in term of inclusion of the food group in their diets (animal health, “natural” food production and processing chains, environmental impact, potential for improved health) and consumer beliefs, attitudes and awareness of nutritional issues around milk and dairy products.

3) To design a protocol leading to an improved product for piloting, evaluating its acceptability and impact on selected markers of health.

The project offers opportunities to develop research and transferable skills in a field with important social, health and commercial relevance.
