About the Project

Prof. Rastall is interested in research in the area of prebiotic oligosaccharides, synbiotic combinations with probiotics and the impact of structure on the gut fermentation of carbohydrates. An opportunity is available for a self-funded PhD student to work on the potential of converting waste biomass into functional food ingredients. He is looking for a PhD student with skills in enzyme biotechnology, microbiology and/or carbohydrate analysis.
