Title: The effect of processing on meat protein digestibility in vitro
Location: Riddet Institute, Massey University, Palmerston North, New Zealand
Supervisor: Dr Lovedeep Kaur
Duration: 3 years
Remuneration: $27,000 (NZD) per annum (tax exempt) + student fees

The Opportunity
A funded PhD position is available at the Riddet Institute- a Centre of Research Excellence hosted by Massey University.
The research work carried out by our group on the protein digestibility of meat has shown that it is affected by processing parameters, muscle microstructure and other components of the food matrix. Therefore, it is important to understand the basic mechanisms affecting meat protein digestibility as this knowledge may be used to guide the development of novel meat protein structures with improved digestibility.
Our hypothesis is that selective denaturation of muscle proteins will enhance the nutritional and sensory attributes of muscle based foods. In this project, we will investigate the effects of new processing technologies alone or in combination with conventional cooking on meat microstructure, texture and protein digestion in vitro.

Candidate Requirements
The suitable candidate will have:
• Bachelor’s degree with suitable honours or a Master’s degree in Food science and technology and/food chemistry and engineering or related fields.
• Some experience in undertaking research in the above mentioned areas (including literature searches, laboratory work, analysing data, and writing publications for peer reviewed journals) is preferred.
• Some experience in laboratory work is preferred
• Strong academic record
• Ability to conduct research within an interdisciplinary team environment
• Strong initiative, interest and enthusiasm
• Good time management and organizational skills
• Sound communication skills

Candidate should also meet the requirements for entry to PhD studies at Massey University (www.massey.ac.nz/massey/postgraduate/).
Also, the position may require spending few weeks at INRA (Clermont-Ferrand-Theix), France for performing some experiments.
